Hey Thorsword,
You can delete the Settings.json file outside of the game in order to reset the graphics and all settings back to defaults.
Open File Explorer and navigate to:C:\Users\(username)\Saved Games\Diablo II Resurrected
Find Settings.json and delete the file. Then launch Diablo II Resurrected again so the file will be recreated automatically.
