Every class starts from the same table row shape and a different set of numbers, and the numbers are why the same 500 points of Vitality make a very different Barbarian and Sorceress. The columns below are charstats.txt; the per-point and per-level columns are stored in quarters, shown here as whole points.

Life at level 1 is Vitality plus the table's flat 30 (hpadd); starting mana is the Energy.

Every class gets 5 attribute points and 1 skill point a level (StatPerLevel, SkillsPerLevel); the quest rewards add the rest.
life = starting life + life per level × (level − 1) + life per Vitality × (Vitality − starting Vitality) + flat "+X to Life" + "Increase Maximum Life %"
Increase Maximum Life and Increase Maximum Mana are percentages of the total above (Battle Orders is the big one); flat Life and Mana from items add before the percentage. Base Maximum Stamina follows the same shape with the stamina columns, and Vitality and Energy each have a page with the item sources.
Energy is the one attribute the table punishes least and most builds still skip: two mana a point on a caster against potions, leech and Insight for free. The exception is an Energy Shield Sorceress, whose mana is her life.
Written from the game's tables (build 3.3.93847) and the cited pages; a per-level table is computed from skills.txt and skilldesc.txt by the same evaluator the skill pages use.
