Vitality is the attribute that gives life and stamina. Points from items count exactly like points you spend yourself.
What one point gives depends on your class (charstats.txt LifePerVitality, StaminaPerVitality; stored in quarter points, converted here):

Life percentages from Increase Maximum Life multiply the total, including the life from Vitality. The "per level" version of the stat grows with your character level, and the tooltip shows the range.
